Ingredients Substitutions
Whether it is due to dietary restrictions or availability, sometimes we need to find an ingredient substitution. Please note, that the flavor may be slightly different.
- Ground Beef - You can use ground chuck or a leaner ground beef. Ground turkey, ground chicken, or ground pork will also work.
- Beef Broth - If you do not have beef broth available, chicken broth or vegetable broth are all good substitutions.
- Corn - Canned corn or frozen corn will both work.
- Black Beans - Pinto beans or red beans would both work in place of the black beans.
- Penne Pasta - Rigatoni, Rotini, Macaroni, or Shells can all be used. Just note that the cooking time may need to be adjusted.

Step-by-Step Instructions
Set the Instant Pot to saute mode and heat until "hot". Add the ground meat and cook until the meat is browned and crumbled. If you are using extra lean meat, you may need to add a drizzle of olive oil or canola oil.
Drain off the excess grease when the meat has browned. Cancel the saute setting.
Add the taco seasoning to the cooked ground meat to the pot.
Add the beef broth and scrape the bottom of the pot to remove any browned bits.
Next, add the black beans
And the corn.
Now add the dry (uncooked) pasta.
Top everything off with the salsa. Do not stir.
Place the lid on the Instant Pot and make sure the valve is set to sealing. Set the pressure cooker to manual and pressure cook on high pressure for 5 minutes.
Quick release the pressure valve when the cycle has completed.
Stir in 1 cup of cheese to the taco pasta.
Top with the remaining cheese and place the lid back on the pot for a few minutes, until the cheese melts.
