Before the kids came along, my husband and I would enjoy going out for the occasional Champagne Brunch. We wouldn't even have thought about Virgin Mimosas.
In those days, we would drink a little too much and eat way too much. As much as I love Champagne, I know now that just a little bit would be a guaranteed headache for me. I guess those days are over.

This past Easter, I made some of these Virgin Mimosas for us. They were delicious and the kids were able to enjoy them too.
It was a wonderful Easter day. My son and husband went to an early movie while my daughter and I stayed home. We dyed some eggs and decided to give Southern Fatty's Homemade Marshmallow Peeps a try. (They were amazing!)

How to make this kid-friendly beverage
Start with your favorite brand of orange juice, limeade, and lemon-lime soda. As you can see, our favorite brands are the Simply brand and Sprite.
I found these fun, plastic champagne glasses at the local grocery store. The kids got a real kick out of them when they were small.
Fill the glasses about halfway full with the orange juice.
Next, you need to add a little limeade. The addition of the limeade adds a nice flavor to these mimosas.
You want about half as much limeade as orange juice. The glass will now be about three-quarters full.
Finally, top off with a bit of sprite. Stir carefully. The Virgin Mimosas are now ready to serve.
Kid-friendly, and great for adults wanting an alternative to an alcoholic beverage. A great drink to serve at baby showers!

I would like to try your virgin mimosas recipe for a baby shower. However, due to the number of guests, I would like to make it up ahead of time and serve it from a punch bowl. Do you think this would work, and could you give me an idea as to the amount of each ingredient that would be needed?
Thanks.

Hi! I have never made a large batch of these mimosas. If it were me, I would just play with it a bit. Just before the shower pour a good amount of orange juice and a small amount of limeade in the bowl. Maybe 1/4 to 1/3 cup limeade to 2 cups orange juice. Then add some lemon-lime soda to get a decent amount of carbonation. Sample it and adjust from there. Since it will be in a punch bowl you might also want to make an orange juice ice ring to help keep it cool. Good luck and let me know how it goes.
