    Combine all the flavors of a delicious classic cheeseburger, add a crispy tortilla shell, and dip all that into a out of this world special sauce. This Cheeseburger Quesadilla recipe is ready in about 30-minutes and is sure to be a hit with the whole family.

    This is a super easy, ground meat, dinner recipe. Other ground meat recipes your family might enjoy are Turkey Sausage Pasta and Tacos made with ground turkey.

    Ground Beef, Onion, Seasoned Salt, Salt and Pepper, Butter, Tortilla Shells, Shredded Cheddar Cheese, Tomatoes, Pickles, Mayonnaise, Yellow Mustard, Ketchup, Dill Relish, and Sweet Paprika. 

    Ingredient Notes

    • Ground Meat - You can easily substitute ground turkey for the ground beef. You may want to add a drizzle of olive oil to the pan if using extra lean ground meat. 
    • Cheese - Other than cheddar cheese, you can use colby jack cheese, monterey jack cheese, or even pepper jack cheese for a bit of extra heat. 
    • Seasoned Salt - If you do not have seasoned salt, add a sprinkle each of onion powder and garlic powder. 

    Step-by-Step Recipe Directions

    In a small bowl, mix together the ingredients to make the special sauce.

    Set the sauce aside while you prepare the quesadillas.

    Ground beef, diced onion, and spices cooking in a cast iron skillet.

    Heat a large skillet over medium to medium high heat. Add the ground meat along with the diced onion and seasonings.

    Crumble the beef, or turkey, as it cooks until it is no longer pink. Drain off any excess grease and place the browned meat aside until ready to use.

    Using the same skillet, wipe it out if necessary, and add one tablespoon of butter. Depending on the size of your skillet, place one or two tortilla shells into the pan, with half of the tortilla shell hanging out the side of the skillet. 

    Over one half of each tortilla, sprinkle about 2 tablespoons of cheese. 

    Tip: There are two ways to assemble a quesadilla. By folding a single tortilla shell in half as shown, then cutting it into 4 wedges. Or, by using two tortilla shells and cutting it into 8 wedges.

    Add about ½ cup of the meat mixture.

    On top of the ground meat, add about one tablespoon each of the diced tomato and diced pickles.

    Add an additional sprinkle of cheese.

    Fold the other half of the tortilla over the top of the cheeseburger mixture. Cook until the tortilla is golden brown, then flip it over and cook the other side for 1 to 2 minutes until golden brown.

    Tip: Instead of adding butter directly to the skillet before adding the tortilla, you can assemble the quesadilla on a cutting board and butter the outside of the tortilla shell before adding it to the hot skillet.

    Cut the quesadillas into wedges and serve with the sauce.

    Store any leftover quesadillas in a Ziploc bag or an airtight container in the refrigerator. Use up any leftovers within 3 days.

    Ingredients

    For the burger filling

    • 2 pounds Ground Beef 85/15
    • 1 Onion small, diced
    • 2 teaspoons Seasoned Salt *
    • ¼ teaspoon Salt
    • ½ teaspoon Black Pepper

    For the quesadillas

    • ¼ cup Butter
    • 8 Flour Tortillas soft taco size 8"
    • 4 cups Sharp Cheddar Cheese shredded
    • 2 Roma Tomatoes diced
    • ½ cup Dill Pickles diced

    For the special Sauce

    • ¼ cup Mayonnaise
    • ¼ Ketchup
    • 2 teaspoons Yellow Mustard
    • ¼ cup Dill Relish
    • ¼ teaspoon Sweet Paprika

    Notes

     
    Ground turkey may be used in place of the ground beef.
    In place of the seasoned salt you can add a bit of onion powder and garlic powder, and adjust the salt and pepper as you like. 
    When making the special sauce, in place of the relish you can use ¼ cup chopped dill pickle and 1 tablespoon of the pickle juice.
