Discover the ultimate comfort food with this Instant Pot taco pasta recipe - a delicious blend of Mexican flavors and tender pasta that's ready in minutes!
Set the Instant Pot to saute mode and heat until "hot". Add the ground meat and cook until the meat is browned and crumbled. If you are using extra lean meat, you may need to add a drizzle of olive oil or canola oil.
Drain off the excess grease when the meat has browned. Cancel the saute setting.
Add the taco seasoning to the cooked ground meat to the pot.
Add the beef broth and scrape the bottom of the pot to remove any browned bits.
Next, add the black beans, corn, pasta, and salsa. Do not stir.
Place the lid on the Instant Pot and make sure the valve is set to sealing. Set the pressure cooker to manual and pressure cook on high pressure for 5 minutes.
Quick release the pressure valve when the cycle has completed.
Stir in 1 cup of cheese to the taco pasta. Top with the remaining cheese and place the lid back on the pot for a few minutes, until the cheese melts.
You can serve the taco pasta with your favorite taco toppings such as tomatoes, avocados, cilantro, black olives, etc...
