    This Fiesta Chicken recipe is a quick meal ready for the oven in about 10 minutes. Perfect for picky eaters, this easy rice casserole will remind of the delicious burrito bowls we have come to love.

    Fiesta Chicken casserole is a one dish meal that is so easy to prepare! The whole family will love this delicious meal that is bursting with flavor.

    Recipe Ingredients

    Chicken, Black Beans, Corn, Shredded Cheese, Taco Seasoning, Cream of Chicken Soup, Salsa, Paprika, Rice, Water, Salt, and Pepper.

    Ingredient Notes

    • Chicken - Slice chicken breasts into strips, or use chicken tenders.
    • Beans - Substitute kidney beans or pinto beans for the black beans if desired.
    • Cheese - For a little more heat, add some pepper jack cheese.
    • Soup - If you are not a fan of condensed soup, sour cream works great in its place.
    • Spice it up - A small can of diced green chilis will do the trick! Add a little grilled chicken flavor by using smokey paprika in place of the regular paprika.
    • Garnish - Add some toppings: sour cream, chopped cilantro, green onions, sliced jalapeno, or fresh Pico de Gallo. 

    Step-by-Step Directions

    Preheat the oven to 375 degrees F. Prepare a 9x13 casserole dish with nonstick cooking spray for easy clean up.

    Salsa, black beans, corn, taco seasoning, rice, and condensed soup in a baking dish.

    In the prepare baking dish, add the salsa, black beans, corn, uncooked rice, condensed soup, and taco seasoning blend. Mix together.

    Chicken strips laid over rice and bean mixture ready to bake.

    On top of the seasoned rice mixture, lay the strips of chicken breast. Sprinkle the chicken with salt, black pepper, and paprika.

    Cover the baking dish with aluminum foil and bake for 45 minutes, stirring the rice mixture around the chicken halfway through the cooking process.

    Check for doneness of the chicken and rice, chicken is done when the internal temperature reaches 165 degrees F.  

    Continue baking an additional 15 to 20 minutes if needed. (Cooking time depends on the thickness of the chicken breast.)

    Remove the Fiesta Chicken casserole from the oven and top with cheese. Allow the casserole to rest as the cheese melts.

    Recipe FAQ's

    Can I use chicken thighs to make Fiesta Chicken?

    ​Although I haven't tried it, chicken thighs should work just fine. Remember, you need to cook the casserole until the rice is done and the chicken reaches a temperature of at least 165 degrees F.

    Do I need to cook the rice before baking the Fiesta Chicken?

    No. The rice will cook as this chicken casserole is baking. 

    How do I store leftover Fiesta Chicken casserole?

    Store any leftovers in an airtight container in the refrigerator for up to 3 days.

    Ingredients

    • 10.75 ounces Cream of Chicken Soup
    • 15 ounces Black Beans rinsed and drained
    • 1 cup Salsa
    • 12 ounces Corn frozen or canned (drained)
    • ¾ cup White Rice uncooked
    • 2 tablespoons Taco Seasoning
    • ½ cup Water
    • 2 pounds Chicken Breast boneless, skinless
    • ½ teaspoon Paprika plain or smoked
    • ½ teaspoon Salt
    • ¼ teaspoon Black Pepper
    • ½ cup Cheddar Cheese shredded
    • Chopped Cilantro

    Instructions

    • Preheat the oven to 375 degrees F.

    Chicken breast cut into strips or chicken tenders both work well in this recipe. 
    Store any leftovers in an airtight container in the refrigerator for up to 3 days. 
    How to freeze:  Cover tightly with aluminum foil and freeze for up to 3 months. Thaw in the refrigerator overnight. If using glass baking dishes, place on the counter as the oven preheats. Remove the aluminum foil. Follow the above instructions to bake.
