- Chicken - Slice chicken breasts into strips, or use chicken tenders.
- Beans - Substitute kidney beans or pinto beans for the black beans if desired.
- Cheese - For a little more heat, add some pepper jack cheese.
- Soup - If you are not a fan of condensed soup, sour cream works great in its place.
- Spice it up - A small can of diced green chilis will do the trick! Add a little grilled chicken flavor by using smokey paprika in place of the regular paprika.
- Garnish - Add some toppings: sour cream, chopped cilantro, green onions, sliced jalapeno, or fresh Pico de Gallo.
Step-by-Step Directions
Preheat the oven to 375 degrees F. Prepare a 9x13 casserole dish with nonstick cooking spray for easy clean up.
In the prepare baking dish, add the salsa, black beans, corn, uncooked rice, condensed soup, and taco seasoning blend. Mix together.
On top of the seasoned rice mixture, lay the strips of chicken breast. Sprinkle the chicken with salt, black pepper, and paprika.
Cover the baking dish with aluminum foil and bake for 45 minutes, stirring the rice mixture around the chicken halfway through the cooking process.
Check for doneness of the chicken and rice, chicken is done when the internal temperature reaches 165 degrees F.
Continue baking an additional 15 to 20 minutes if needed. (Cooking time depends on the thickness of the chicken breast.)
Remove the Fiesta Chicken casserole from the oven and top with cheese. Allow the casserole to rest as the cheese melts.
