Recipe Ingredients
- Chicken Taquitos
- Green Enchilada Sauce
- Cream of Chicken Soup
- Sour Cream
- Diced Green Chilies
- Shredded Cheddar and Monterey Jack Cheese
- Cilantro (optional)
- Olives (optional)
Recipe Directions
Preheat the oven to 375 degrees F. Prepare a baking dish by spraying it with nonstick cooking spray.
- Step 1: Add the frozen taquitos to the bottom of the casserole dish.
- Step 2: Mix together the sour cream, cream of chicken soup, and diced green chilies.
- Step 3: Spread the sour cream mixture over the taquitos.
- Step 4: Sprinkle the shredded cheese over the creamy sauce.
- Step 5: Next, drizzle the green enchilada sauce over the shredded cheese. Cover the dish with foil and bake.
- Step 6: Remove the foil and bake a few more minutes. Top with olives and chopped cilantro if desired.
Cool slightly and serve the Chicken Taquito Casserole. This dish would go well with a nice side salad topped with some homemade ranch dressing!
Mom Tip
Leftovers are easily reheated in the microwave. Heat individual servings, lightly covered with a paper towel, until heated through.

Chicken Taquito Casserole
Ingredients
- 18 Chicken Taquitos frozen
- 10.5 oz Condensed Cream of Chicken Soup 1 can
- 1 cup Sour Cream
- 4 oz Diced Green Chilies
- 1 cup Cheddar Cheese shredded
- 1 cup Monterey Jack Cheese shredded
- 10 oz Green Enchilada Sauce
- ¼ cup Cilantro chopped (optional)
- Sliced black olives optional
Instructions
- Preheat the oven to 375 degrees F. Prepare a baking dish by spraying it with nonstick cooking spray.
- Add the frozen taquitos to the bottom of the casserole dish.
- In a medium size bowl, mix together the sour cream, cream of chicken soup, and diced green chilies.
- Spread the sour cream mixture over the taquitos.
- Sprinkle the shredded cheese over the creamy sauce.
- Next, drizzle the green enchilada sauce over the shredded cheese. Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake another 10 to 15 minutes, or until the cheese is melted and bubbly.
- Top with olives and chopped cilantro if desired.
- Cool slightly and serve.
