    We love making this Easy Coconut Brownies Recipe that is topped with chocolate chips and almonds. It is one of our favor box brownie hacks.  Shredded coconut is mixed in with the brownie batter and on top of the brownies is a layer of slivered almonds and chocolate chips. So simple, and so delicious!

    Why we like this recipe

    • We get to start with our favorite brownie mix, so we know that we will have delicious brownies every time. 
    • This recipe is easy enough for the kids to either help with, or to make on their own. 
    • The combination of chocolate, almond, and coconut is always a winning combination. Our little twist on Almond Joy brownies. 

    A couple more box brownie mix hacks we like are these brownies made with Nutter Butter Peanut Butter Cookies, so good! And these chocolate brownies topped with a homemade chocolate crumble. Amazing!

    Recipe Ingredients

    To make these easy coconut brownies, start with your favorite boxed brownie mix and add ingredients as listed on the back of the box. This usually includes canola oil or vegetable oil, eggs, and water.

    Additional ingredients you will also need are shredded coconut, slivered almonds, and chocolate chips. 

    Tip: There are many good brownie boxes mixes available. For the perfect brownie for your family, read the back of the package for instructions on how to make a more cake-like brownies, or a more fudgy texture.

    Step-by-Step Recipe Directions

    Check the ingredients asked for on the back of your brownie mix box. This will usually be canola oil, eggs, and possibly water. In a mixing bowl, blend all the ingredients together to make the brownie batter.

    Next, add about 1 cup of shredded coconut to the brownie batter. Stir to blend.

    Decide what size baking dish to use. Your box of brownie mix can help guide you on your choices on pan sizes and baking times. Spray the baking dish with non-stick cooking spray.

    Pour the brownie batter into the baking dish. Sprinkle the slivered almonds over the brownie batter.

    Next, sprinkle the chocolate chips over the top of the slivered almonds. The chips add another layer of rich chocolate flavor to these fudgy brownies.

    Bake the coconut brownies according to the brownie package directions. Use the size of your baking dish as a guide to the baking time. Since there are extra toppings added to the mix, they may take a little longer than directed. Watch them closely and do not overbake.

    How to store these brownies?

    I usually just cover the brownies, covered with aluminum foil, on the counter. 

    What is the best way to serve brownies?

    ​All ways are good ways, right? I like a slightly warm brownie just as it is. Or, for a more rich dessert, cut a large square of warm brownie, place it on a plate, and top it off with some vanilla ice cream. Want to take it a step further, drizzle some chocolate sauce over the top. 

    How do I make brownies with a more intense flavor?

    You can always add a couple teaspoons of instant coffee when making the brownie batter. Other ingredients that really compliment chocolate are salt and vanilla.

    Mom Tip

    Should I use a metal pan or glass pan for baking? Personally, I switch between both. In these photos a glass dish was used, resulting in a more fudgy brownie (this is the way I like it).     Ingredients

    • 1 box Brownie Mix pick your favorite brand
    • 3 tablespoons Water *
    • ½ Canola Oil *
    • 2 Eggs *
    • 1 cup Shredded Coconut unsweetened
    • ½ cup Chocolate Chips **
    • ½ cup Sliced Almonds

    Instructions

    • Start off with a box of your favorite Chocolate Brownie Mix and prepare the mix according to the directions on the package.
    • Stir in 1 cup of shredded coconut.
    • Top the brownie batter with ½ cup of slivered almonds.
    • Next, sprinkle the chocolate chips over the top of the almonds.
    • Bake the brownies according to the package directions. Additional time may be needed due to the added ingredients.
    • Let cool slightly and serve.
