    Possibly the Best Chocolate Chip Cookies

    Possibly the Best Chocolate Chip Cookies... according to my family, anyway. My son gave me the title for this post. I said to him "These taste kind of like the fresh baked cookies you used to like so well from the grocery store". "No", he said, "these are way better"!

    I asked him to describe these cookies. Awesome. Fantastic. Raw. Fire. Amazing. These are all words he used.

    I have seen many Chocolate Chip Cookie recipes on the internet that have pudding mix in them. I decided to give them a try, altering the recipe as I usually do to be able to use ingredients I had on hand.

    I was worried these were not going to work out at all, but instead I have another "Cook This Again, Mom!" recipe for my kids.

    These cookies are soft, not crisp. Not exactly chewy, but definitely not crunchy. Full of flavor and absolutely delicious. And, as per my son, "Possibly the Best Chocolate Chips Cookies you have ever eaten in your life"!

    Ingredients

    • ½ cup Butter softened
    • ½ cup Canola Oil
    • ⅔ cup Brown Sugar
    • ⅓ cup Granulated Sugar
    • 2 Eggs large
    • 1 teaspoon Vanilla
    • 5.1 ounces Vanilla Instant Pudding Mix large
    • 1 teaspoon Baking Soda
    • 1 teaspoon Salt
    • 2 ¼ cups All Purpose Flour
    • 2 cups Chocolate Chips

    Instructions

    • Using an electric mixer, blend together the softened butter and oil. Add both sugars and mix well. Add the eggs, vanilla, pudding mix , baking soda, and salt and continue to mix until light and fluffy.
    • Using a wooden spoon, mix in the flour just until combined. Stir in the chocolate chips.
    • Bake the cookies in a 350 degree oven for about 12 minutes. Adjust the time to your personal preference.
    • I had a total of 48 cookies using my 1 ½" cookie scoop.
