The other day I had this idea. What if I added a crumb topping to brownies?
Sounds good, right?
But, not just plain crumb topping. No. Chocolate crumb topping!
Then I thought I might as well throw a couple of handfuls of chocolate chips in there too, right?
So I put together this brownie recipe and I wasn’t sure how they were going to turn out.
Ingredients needed
- Boxed Brownie Mix
- Ingredients needed as listed on Brownie Mix
- Brown Sugar
- Flour
- Cocoa Powder
- Old Fashioned Oats
- Butter
- Vanilla
My son happened to have some friends over that afternoon. After I took some pictures of the brownies, I passed some around to the boys. According to my son, his friends are still talking about how much they enjoyed them.
Of course, like most of my recipes, these are super simple to put together. Start with a box of your favorite brownie mix.
How to Make Chocolate Crumb Topping
- I like to whisk together the flour and cocoa powder first.
- Then add the brown sugar and oats. Mix together.
- Add butter and vanilla.
- Use a pastry cutter, fork, or like I do, use your fingers and mix together the ingredients until a nice crumble forms.
How to make this recipe
Mix the brownie mix according to directions and put the batter into a baking pan. I used a 9 x 9 pan.
Mix all the ingredients for the chocolate topping together until a nice crumble forms. I just used my hands, but you can use a fork or pastry cutter.
Sprinkle a handful or so of Chocolate Chips over the brownie batter, then add the Chocolate Crumb Topping, then another handful or so of Chocolate Chips over the top. I used between ⅓ – ½ cup of Chocolate Chips total.
Bake according to directions on the brownie mix package. You may find it necessary to add another couple of minutes to the baking time.

OMG! These came out great. I changed the crumb recipe only a little by adding malted milk powder. I put half the brownie batter in the pan, put in half the crumb mix, added rest of the batter and then rest of crumbs. I skipped a step by just adding the chocolate chips to the crumbs! Took a while to bake but well worth the wait. Top was nice and crunchy. Brownies were chewy, but not dry. Thanks for the idea!
Oh, I will have to try the malt! Glad you liked the idea. 🙂
