    This Cheesy Spinach Topped Chicken recipe is a perfect weeknight meal. It's delicious, and it can be on your table in less than 30 minutes - what more could you ask for? This recipe is so easy to make that even if you're not in the mood to cook, you'll have no problem whipping up this dish. Give it a try!

    Cream cheese, mozzarella, or Monterey Jack mixed with mayonnaise and spinach piled high atop sauteed chicken breast. A quick, simple, and delicious chicken and spinach recipe your family will love.

    This was inspired by a recipe I read in Food Network Magazine. I adjusted the recipe slightly and simplified the cooking directions, so this dish works for my family and me.

    Ingredients needed

    • Frozen Spinach, thawed
    • Thin Cut Chicken Breast
    • Montery Jack or Mozarella Cheese
    • Cream Cheese
    • Mayonnaise
    • Olive Oil
    • Itailian Seasoning
    • Salt
    • Pepper

    Instructions

    Following package instructions, place the frozen spinach in a dish and microwave until thawed. Drain the spinach and squeeze out as much excess liquid as possible. Place the spinach in a bowl and allow it to cool.

    Mix the cooled spinach with cream cheese, shredded cheese, and mayonnaise. Set the mixture aside until ready to use.

    Heat a skillet over medium heat.

    Place the chicken on a paper towel and pat dry. Season the chicken with salt, pepper, and Italian seasoning.

    Add the olive oil to the heated skillet and carefully add the chicken breasts. Cook until lightly brown and the chicken releases easily from the pan, about 2-3 minutes.

    Once the chicken has been turned over, cook the chicken for about one more minute and top with the creamy spinach. Cover the pan and cook for 2-3 more minutes. The chicken is done when it reaches 165 degrees F.

    This easy chicken dinner is a meal in itself. You have it all! Protein, a vegetable, a little cheese. If you need a bit more, serve with a slice of buttered french bread, or better yet... garlic bread. Yum!

    Tips and Substitutes

    Do you need to change up the recipe a bit?

    • Want it a little spicier? - add a bit of red pepper flakes while seasoning the chicken.
    • Substitute for mayonnaise?- try a little sour cream instead.
    • Don't have mozarella? - Use Montery Jack instead, and/or add a bit of Parmesan cheese.
    • Prefer to use chicken thighs? - Should be fine, just be sure to cook until the chicken reaches at least 165 degrees F.
    • Storage - Keep any leftover chicken in the refrigerator. Keep in a covered container and use within the next couple of days. Re-heat in the microwave.
