    Finding a new, simple baked chicken recipe is always appreciated. This Blackberry Chicken is easy, delicious, and offers a simple blackberry sauce.

    Not only is this delicious chicken, it is beautiful! Especially when served along side our Arugula and Blackberry Salad with goat cheese and a tall glass of Blackberry Lemonade!

    Recipe Ingredients

    Ingredients needed to make blackberry glazed chicken.

    Chicken breasts, blackberries, brown sugar, paprika, cumin, garlic, salt, pepper, olive oil, white wine vinegar, and thyme.

    Step-by-Step recipe directions

    Raw chicken breasts in a casserole dish.

    Preheat the oven to 375 degrees F.

    Prepare a 9-inch x 13-inch baking dish with non stick cooking spray. Place the chicken in the prepared baking dish.

    In a small mixing bowl, mash 4 blackberries, using a fork, until completely muddled and the juices have completely released.

    Mix the blackberries together with the brown sugar, vinegar olive oil, thyme, ¼ teaspoon paprika, garlic, cumin, salt, and black pepper. Mix until well blended.

    Pour the blackberry sauce over the chicken. Sprinkle with the remaining paprika and additional salt and black pepper if desired.

    Baked the chicken, basting often, for 40 to 50 minutes. Chicken is done when the temperature reaches 165 degrees F, in the thickest part of the chicken, on the meat thermometer.

    Serve the baked chicken with additional blackberries if desired.

    Ingredients

    • 4 Chicken Breasts boneless, skinless
    • 4 Blackberries additional for serving
    • 2 tablespoons Brown Sugar
    • 2 tablespoons White Wine Vinegar
    • 1 teaspoon Olive Oil
    • 1 teaspoon Thyme fresh, chopped
    • ½ teaspoon Paprika divided
    • ½ teaspoon Garlic minced
    • ¼ teaspoon Cumin ground
    • ½ teaspoon Salt
