Mom’s Applesauce Cake. This recipe is one of those treasures I found in my mom’s recipe card box. I remember her making this applesauce cake when I was young, and now I was able to make it for my kids. I have altered her recipe slightly. Mom used shortening, and I replaced it with oil. I also omitted the raisins and nuts. It is such a good feeling to be able to pass yet another recipe down to my kids. I only wish mom had a chance to make it for them. Miss you mom.

It was simple to make. It was moist and delicious. It brought back great memories.

Ingredients to Make Mom’s Applesauce Cake

Egg, Brown Sugar, Granulated Sugar, Oil, Vanilla, Applesauce, Flour, Baking Soda, Baking Powder, Salt, Cinnamon, Cloves, and Allspice.

Put the egg in a large bowl and beat it with a whisk.

 Add the sugars, oil, vanilla, and applesauce. Mix it all together.

 In a separate bowl mix together the flour, baking soda, baking powder, salt, cinnamon, cloves, and allspice.

 Add the dry ingredients to the liquids. Mix until everything is combined.

 Put the batter into a 13″ x 9″ baking dish that has been sprayed with non-stick spray.

 Bake in a 350-degree oven until a toothpick inserted into the middle of the cake comes out clean.

Frost, if you like. I remember mom often would just sprinkle powdered sugar over her cakes. I happened to have a tub of pre-made vanilla frosting. To spice it up I added about a 1/4 teaspoon of cinnamon and a dash of cloves to the frosting.

Serve.

Mom’s Applesauce Cake

1 Egg
1/2 cup Brown Sugar
1/2 cup Granulated Sugar
1/2 cup Canola Oil
1 teaspoon Vanilla
1 cup Applesauce
2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Cloves
1/4 teaspoon Allspice

In a large bowl beat the egg. Add the sugars, oil, vanilla, and applesauce. Mix well.

In a separate bowl mix together all the dry ingredients. Add the dry ingredients to the liquids and mix until combined.

Pour the batter into a 13″ x 9″ baking dish that has been sprayed with non-stick spray.

Bake in a 350-degree oven for 23-28 minutes, or until a toothpick comes out clean when inserted into the center of the cake. Let the cake cool.

Frost if desired.

    I found this posting of yours completely by chance. You know how you start clicking away on a search and it up forgetting what you were even searching for in the first place? I have an applesauce cake I have made for years but when I started to read through yours, it brought me to tears. I now have grandchildren of my own and I wish my mom was still here. I always feel closest to her when I am in kitchen…I think she must love your applesauce cake!

    I use a simular recipe and it IS very good. We add raisins and use cream cheese frosting. 🙂

      I remember my mom making this cake when I was a little girl. She used raisins, but my daughter doesn't like them. Cream cheese frosting would be delicious on it. 🙂
