    Spiced Cranberry Skillet Cake is a perfect dessert, snack, or maybe even breakfast cake if you prefer something not too sweet. The fresh cranberries add a bit of tartness to the yummy cake.

    This cranberry cake recipe was adapted from the Costco Connection magazine.

    I took their recipe, added some spice, and reduced the sugar slightly. You can always add a ¼ cup or a bit more sugar if you prefer your cake a little bit sweeter.

    However, this cranberry cake is a perfect recipe for the holidays: something simple, a little less sweet, festive, and delicious.

    Ingredients needed

    • Fresh Cranberries
    • Walnuts
    • All-purpose Flour
    • Granulated Sugar
    • Baking Powder
    • Salt
    • Cinnamon
    • Allspice
    • Ginger
    • Cloves
    • Butter
    • Eggs
    • Vanilla
    • Powdered Sugar

    Prepare the ingredients

    Cranberries

    Wash, sort, and completely drain the cranberries before using them—no need to chop. Leave them whole.

    You may also want to dry them a bit. I rolled some around on paper towels first. I may or may not have had cranberries rolling all over the counter, but it did the trick.

    Walnuts

    For the walnuts, I started with a package of store-bought pre-chopped walnuts. The bag contained ½ cup. I then finely chopped the walnuts to use in this recipe.

    The original recipe called for even more walnuts than I used, so there is probably some room here if you would like to add more or less or leave them out if you prefer.

    Spices

    The original recipe for Cranberry Cake didn't contain any of the spices I used. You can adjust the amount of cinnamon, allspice, ginger, and cloves as you like.

    Additions or Substitutions

    • Adding a bit of orange zest would be really nice in this recipe.
    • Leave out the walnuts, or maybe try it with pecans.
    • Again, the spices can be adjusted; however, you like.

    How to prepare this recipe

    1. Preheat the oven to 350 degrees.
    2. Lightly grease a 9" cast iron skillet or other oven-safe skillet or pan.
    3. In a medium-size bowl, combine the cranberries with the walnuts.
    4. In a large bowl, mix the flour, granulated sugar, baking powder, salt, and spices.
    5. Add a few tablespoons of the flour mixture to the cranberries and stir to coat the cranberries and walnuts.
    6. Beat the melted butter with the eggs and vanilla.
    7. Add the butter and egg mixture to the dry ingredients. Stir until thoroughly combined.
    8. Fold in the cranberry and walnut mixture.
    9. Pour the cranberry cake batter into the prepared skillet.
    10. Bake the cake for about 40 minutes, or until a toothpick inserted in the center, comes out clean. (You may need to adjust the baking time if you are not using a cast-iron skillet. I would start watching it at about 30 minutes.)
    11. Let the Spiced Cranberry Skillet Cake cool slightly before serving.
    12. Dust with powdered sugar if desired.

    • 2 cups Cranberries washed and dried
