For this recipe, I prefer to use 85/15 ground beef.
First of all, add the ingredients to a large mixing bowl. Use a large spoon, fork, or even your hands to mix it all together. I find that by using my hands the seasonings get mixed into the ground beef better.
Don't forget to thoroughly wash your hands with warm soapy water.
Spray a baking dish with non-stick spray. I use my dish I also use to bake bread. It is 1 ½ quarts and measures about 8" x 4.5".
Place the no-veggie meatloaf mixture into the baking dish and gently press down. Do not press firmly, just get all the ingredients to reach the edges.
Top the meatloaf mixture with a little bit more ketchup. This adds so much flavor to the baked meatloaf! Bake the meatloaf in a 350-degree oven for about an hour. You want the internal temperature to reach at least 160 - 165 degrees F.
Let the No-Veggie meatloaf cool slightly, slice, and serve. Simple, and good. Meatloaf goes very well with mashed potatoes or a nice side salad.

Ingredients
- 1 ½ pounds Ground Beef 85 -15
- ½ cups Saltine Crackers crushed
- ⅓ cup Ketchup another ¼ cup on top if desired
- 2 Eggs
- 1 teaspoon Salt
- ½ teaspoon Pepper
- ½ teaspoon Granulated Garlic
- ½ teaspoon Onion Powder
- ½ teaspoon Italian Seasoning
- ½ teaspoon Smoked Paprika
- 1 ½ cups Grated Cheddar Cheese if desired
Instructions
- Put ground beef and the rest of the ingredients in a large bowl and mix well.
- Form into a loaf and put in a pan that has been sprayed with non-stick spray. Top with more ketchup if desired.
- Bake in a 350 degree oven for about an hour until done. I let mine cook until the internal temperature was between 160-165 degrees.
- Let cool slightly, slice and serve.

I have been looking for a meatloaf recipe like my mother's for over 30 years. She tried to teach me to make it years ago but it never turned out. Yesterday was the anniversary of her death.
