Recipe Ingredients
Ingredients needed to make these easy peanut butter marshmallow cookies are: All-purpose Flour, Sugar, Marshmallow Fluff, Baking Powder, Egg, Peanut Butter, and Butter.
Step-by-Step Recipe Directions
Before beginning, you will need to bring the butter to room temperature.
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
Next, make the peanut butter cookie base.
Combine the flour and baking powder in a bowl, whisking them together thoroughly. Set this mixture aside for later use.
In a large mixing bowl, beat the butter and sugar together, using an electric mixer, until they are well incorporated and the mixture is smooth.
Next, add the peanut butter to the bowl and mix it in thoroughly.
When the butter, sugar, and peanut butter are creamed together, add the egg and continue to mix.
Next, add the dry ingredients you mix together earlier.
The dough will be thick as shown above. Using spoons or a large cookie scoop, measure out dough and roll into 2-inch balls. Place the rolled cookie dough onto the prepare baking sheet.
Using your fingers, or the bottom of a glass, press the cookie dough balls until flat.
Tip: If using a glass to press the cookie dough flat, dip the glass into a little bit of sugar before you press the cookie flat, this will help to keep the glass from sticking to the dough.
Once you have flattened each dough ball, place 2-3 teaspoons of marshmallow fluff on top of each cookie.
Cup the flattened dough in the palm of your hand and bring the sides up to cover most of the marshmallow fluff. Roll the dough around a bit in your hand to re-form it into a ball.
Place the cookie dough balls back on the baking sheet. Place the cookie sheet in the oven and bake them on the middle rack, until golden brown.
Filling the Cookies: This might be a little tricky, but it's also the fun part. After you make a little well in your cookie dough, fill it with marshmallow fluff. Be careful not to overfill, or it might get a bit messy in the oven.
Let the fluffernutter cookies cool for a couple of minutes and then move them to a cooling rack.
Cool and serve.
