Instructions
Preheat the oven to 375 degrees F. Prepare a baking dish by spraying it with nonstick cooking spray.
Add the frozen taquitos to the bottom of the casserole dish.
In a medium size bowl, mix together the sour cream, cream of chicken soup, and diced green chilies.
Spread the sour cream mixture over the taquitos.
Sprinkle the shredded cheese over the creamy sauce.
Next, drizzle the green enchilada sauce over the shredded cheese. Cover the dish with foil and bake for 20 minutes.
Remove the foil and bake another 10 to 15 minutes, or until the cheese is melted and bubbly.
Top with olives and chopped cilantro if desired.
Cool slightly and serve.
Notes
Leftovers are easily reheated in the microwave. Heat individual servings, lightly covered with a paper towel, until heated through.
