To make the burger filling
Heat a large skillet over medium to medium high heat. Add the ground meat along with the diced onion and seasonings.
Crumble the beef, as it cooks until it is no longer pink. Drain off any excess grease and place the browned meat aside until ready to use.
To make the quesadillas
Using the same skillet, wipe it out if necessary, and add one tablespoon of butter. Depending on the size of your skillet, place one or two tortilla shells into the pan, with half of the tortilla shell hanging out the side of the skillet.
Over one half of each tortilla, sprinkle about 2 tablespoons of cheese.
Add about ½ cup of the meat mixture.
On top of the ground meat, add about one tablespoon each of the diced tomato and diced pickles.
Add an additional sprinkle of cheese.
Fold the other half of the tortilla over the top of the cheeseburger mixture. Cook until the tortilla is golden brown, then flip it over and cook the other side for 1 to 2 minutes until golden brown.
Notes
Ground turkey may be used in place of the ground beef.In place of the seasoned salt you can add a bit of onion powder and garlic powder, and adjust the salt and pepper as you like. When making the special sauce, in place of the relish you can use ¼ cup chopped dill pickle and 1 tablespoon of the pickle juice.
