Ground Meat - Instead of ground beef you can use ground turkey. Remember, since ground turkey is usually much leaner than ground beef, you may need to drizzle a little oil in the pan before cooking. You may also need a bit of oil if using a very lean ground beef.

Step-by-Step Recipe Directions
Preheat the oven to 350 degrees F.
Prepare a 9 x 13 inch casserole dish with nonstick cooking spray.
Heat a large skillet over medium to medium-high heat. Add the ground meat, bell pepper, and onion. Crumble the meat mixture as it browns.
Cook until the meat is no longer pink. Drain off any excess grease.
Next, add the water, taco seasoning, black beans, and diced tomatoes to the meat mixture.
Bring to a boil and simmer for about 10 minutes or until the liquid has mostly evaporated.
