    Slow Cooker Pulled Chicken

    Not a fan of BBQ sauce? No problem. This Slow Cooker Pulled Chicken is so full of flavor that it makes the perfect pulled chicken sandwich and is also great to use in shredded chicken tacos!

    If you love BBQ sauce, like some members of my family, go ahead and pour some on. You will have the best shredded chicken sandwich that is so simple to prepare.

    The added spices bring all the flavor to this wonderful chicken meal. Add your favorite type or flavor of BBQ sauce to make a fantastic chicken sandwich, or use your favorite toppings and make a delicious shredded chicken taco. Versatile, easy, and yummy!

    Game day or a simple family meal. This Slow Cooker Pulled Chicken is always a hit! Plus, clean-up is a breeze since everything is cooked in the slow cooker!

    Recipe Ingredients

    These seasonings are usually in our pantry. However, I did run out of smokey paprika while doing these photos. In place of it, I used regular paprika along with McCormicks Grill Mates Chipotle and Roasted Garlic seasoning. It was delicious!

    Any spices with chipotle should give you that smokey flavor in smokey paprika.

    Step-by-step directions

    • Spray the slow cooker bowl with non-stick spray.
    • Chop the onion and spread it across the bottom of the bowl.

    • Lay the chicken breasts, then the chicken thighs over the onions. Sprinkle everything with the spices. Top it off with the chicken broth.

    • Stir everything slightly to spread the seasonings over the chicken.
    • Put the slow cooker on low and cook for 4 - 5 hours.

    • Chicken is done when it reaches 165 degrees F.

    • Shred the chicken with two forks. A ground beef masher also works for this.

    Recipe Faq's

    What can I use to get a more intense smokey flavor in my pulled chicken sandwiches?

    You can try a smokey BBQ sauce, or if you prefer, a little bit of liquid smoke adds a fantastic flavor to the chicken.

    Can I use this same recipe in the Instant Pot?

    It should work just fine. I have not tried it, so follow the directions on your Instant Pot on how to cook chicken. Adjust the spices and chicken broth as you see fit.

    How do I keep the bun from getting soggy on a pulled chicken sandwich?

    Toasting the bun first helps to keep the bun together. Plus, be sure to use tongs or a slotted spoon when serving the chicken so that most of the juices go back into the pot.

    Mom tip

    If you want this chicken to cook faster in your slow cooker, start the first hour on high, then reduce the heat until the chicken is done. Once the internal temperature of the chicken reaches 165 degrees F, it is done. You can shred it, turn the slow cooker to warm, and serve.

    • Slow Cooker

    Ingredients

    • 1 Onion diced
    • 1 pound Chicken Breasts boneless, skinless
    • 1 ½ pounds Chicken Thighs boneless, skinless
    • ¾ cup Chicken Broth
    • 1 teaspoon Garlic Powder
    • 1 teaspoon Onion Powder
    • 1 teaspoon Smokey Paprika
    • 1 teaspoon Salt
    • 1 teaspoon Pepper

    Instructions

    • Spray the slow cooker bowl with non-stick spray.
    • Place the onion in the bottom of the slow cooker.
    • Lay the chicken breasts and thighs over the top of the onion.
    • Sprinkle the chicken with the spices.
    • Add the chicken broth. Stir to cover the chicken with the spices.
    • Cook the chicken on low for 4 - 5 hours. Chicken is done when the internal temperature reaches 165 degrees F.
    • Use two forks and shred the chicken.
    • Serve the chicken on a toasted bun with or without bbq sauce. Or, use it to make shredded chicken tacos.

    To speed up the cooking process, cook the chicken for the first hour on high. Then, turn the heat to low and check the chicken temperature after about two hours. The internal temperature of the chicken needs to reach at least 165 degrees F.
