We really enjoy the flavor of Gingerbread, and these Quick and Easy Gingerbread Pancakes are a great breakfast for the kids.

Just add a little bit of molasses and some spices to a basic pancake mix and you have a delicious breakfast. They are perfect for a special weekend or holiday breakfast, and yet easy enough to enjoy any day of the week!
I usually use Krusteaz when I use a pancake mix. I also make up my own Gingerbread Spice Mix. It is a great spice blend to have on hand and is wonderful in these pancakes.
Quick and Easy Gingerbread Pancakes
2 cups Krusteaz Pancake Mix
1 ⅓ cups Water
2 tablespoons Molasses
1 tablespoon Brown Sugar
2 teaspoons Gingerbread Spice
Warm a skillet over medium-low to medium heat. Since these pancakes have a little sugar and molasses in them you want to make sure that the pan doesn't get too hot or the pancakes could burn.
Mix together the ingredients listed above.
Pour ¼ cup of batter into skillet for each pancake. Cook until the edges of the pancake start to get firm and bubbles form on top. Flip over and continue cooking for 1 ½ - 2 minutes, until the pancakes are done.
Serve with maple syrup and whipped cream if desired. You can also sprinkle a little bit of the gingerbread spice over the top.
Gingerbread Spice Mix
Ingredients
- 1 tablespoon Ginger
- 1 tablespoon Cinnamon
- 2 teaspoons Allspice
- 2 teaspoons Nutmeg
- 1 teaspoon Cloves
- 1 teaspoon Cardamom optional
Mix together. Store remaining spice in a sealed container.
