    Baked Apple Pancake

    This recipe is inspired by a recipe my mother-in-law shared with me. Her family is from Finland, and her recipe came out of an old Finnish cookbook. (sorry, I do not have the name of the book). Anyway, as I always do, I made a few changes. Here is my recipe, inspired by hers, for Baked Apple Pancake.

    Baked Apple Pancake

    Very light, and very flavorful.

    First of all, make the batter.

    4 Eggs
    2 cups Milk
    2 tablespoons Butter, melted
    2 tablespoons Sugar
    ½ teaspoon Salt
    ½ teaspoon Vanilla, optional
    1 ½ cups Flour

    Put eggs in bowl. Beat the eggs until thick and bright yellow. Add remaining ingredients. Stir well. Let batter set about 30 minutes. At this point you can prepare your apples, and pre-heat the oven to 375 degrees.

    While the batter is setting, slice 2-3 apples. I used 2 large apples. You can peel the apples if you like, I like leaving the skin on. Put the apples in a 13" x 9" dish that has been sprayed with cooking spray. You can also use two 8" or 9" cake pans. Sprinkle cinnamon sugar over the top, and dot with butter.

    2-3 Apples, sliced (peeled if you like)
    ½ cup Sugar
    3 teaspoons Cinnamon
    2 tablespoons Butter

    Pour the batter over the top. The apples start to float around a bit, so I wouldn't spend too much time trying to arrange apples in the first place. Put in a 375 degree oven and cook about 40 - 50 minutes until golden brown.

    When you first pull the pancake out of the oven it will be all puffy.

    Then it will flatten.

    Finally, serve with a little powdered sugar, whipped cream, or even some maple syrup. We have had this for both breakfast and a lite dinner. Enjoy!

    Pour the batter over the top, the apples will float around a bit.
    Put in the oven and bake for 40 - 50 minutes until golden brown.
