I have used pancake mixes such as Krustez, Pearl Mining Company, and a couple of other store brands. I have not tried this recipe with Bisquick yet. I am adding that to my to-do list!

Homemade Pumpkin Pie Spice
- 1 tablespoon Cinnamon
- 1 teaspoon Nutmeg
- ¾ teaspoon Allspice
- 1 teaspoon ground Ginger
Mix the spices together and store them in a spice jar or air-tight container.
Nothing says Autumn like pumpkin spice! These easy, fluffy easy pumpkin pancakes are the perfect breakfast in the cooler weather of the fall season. They are great in the summer, too!
How to make this recipe
I start by putting the pancake mix and the pumpkin pie spice mix in a medium bowl. Next, use your fingers to sprinkle in the brown sugar to try to prevent any lumps from forming. Whisk everything together.
Now, add the canned pumpkin to the dry ingredients along with about 1 cup of water. Start to mix together, add more water as needed to get a good consistency of the batter for making pancakes.
Cooking the pancakes
Heat a large skillet or griddle over medium heat. You can add a little butter or cooking spray to the pan if you like, but I usually don't if I am using a non-stick pan.
Pour about ¼ cup of pancake batter per pancake and cook for 1 - ½ minutes. The edges of the pancake will start to dry and little bubbles will form on the top. Take a peek and you should see a nice golden brown color.
Turn the pancakes over and continue to cook for another 1 - ½ minutes. If you press slightly in the center of the pancake you will notice it bounce back quickly when they are done.
I like to place the cooked pancakes on a cooling rack for about a minute before stacking them on a plate. This gives them a chance to cool off a bit so they don't steam and collect moisture on the plate.
We love that wonderful pumpkin pie flavor topped off with a little maple syrup and some butter. A little bit of powdered sugar or whipped cream goes great with them too!

No, and I have included a recipe I like for making your own pumpkin pie spice above and also in the recipe card. Or, use just cinnamon if you prefer, but it won't really have that pumpkin pie flavor.
I know people have made their own pumpkin puree, however, it can be more watery than the canned pumpkin you find at the store. You may need to adjust the recipe as necessary.
Or, if you want something really simple, just add some pumpkin pie spice to your pancake mix and omit the canned pumpkin and brown sugar. I have done that many times, too!
This recipe was tested using the plain, canned pumpkin. Pumpkin pie filling has spices added to it already along with other ingredients.

Easy Pumpkin Pancakes with pancake mix
Ingredients
- 2 cups Pancake Mix
- 2 teaspoons Pumpkin Pie Spice
- 1 ⅓ cups Water
- 1 cup Pumpkin canned
- 2 Tablespoons Brown Sugar
Instructions
- Heat a large non-stick skillet over medium heat.
- Whisk together the pancake mix with the pumpkin pie spice. Sprinkle in the brown sugar and mix together making sure that clumps of brown sugar don't form.
- Add the canned pumpkin and about 1 cup of water to start. Mix together and add more water as needed to get a good consistency for pancakes.
- Butter or coat the skillet with cooking spray if needed.
- Pour the pumpkin pancake batter, ¼ cup for each pancake, into the warmed skillet. Cook for about 1 - ½ minutes. The edges will dry, small bubbles will form, and the pancake will turn a golden brown. Flip.
- Continue to cook the pancake for 1 - 1 ½ minutes. The pancake will spring back when lightly pressed in the center when it is done.
- Cool pancakes on a cooling rack for a minute if desired.
- Serve the pumpkin pancakes with maple syrup, butter, whipped cream, powdered sugar or your favorite topping.

After reading your question I gave it a try with the recipe as written plus adding an egg and a couple tablespoons of canola oil. They were tasty, but very soft. If you like a crisper waffle, I would recommend decreasing the pumpkin called for in my recipe by half. Add 1 egg and 2 tablespoons of canola oil. I hope it works out for you!

Tried it with gluten free pancake mix and didn't turn out well. The mixture was too thick, I even added extra water. The pancakes just would not cook all the way through. Willing to try again with regular pancake mix.

Hi. The difference between canned pumpkin puree and canned pumpkin pie filling is that the pumpkin pie filling already is sweetened and has spices added. I have not tried using it in this recipe, so if you do, please let us know how it works!

Tasty, but didn't get the inside consistency that a pancake should have. I think because of the pumpkin it was more gooey inside instead of fluffy bread texture, which I prefer. So maybe need to add more pancake mix? Didn't have time to try it yet.

Was the batter thick? If not, you may need a little more pancake mix. These pancakes do better cooked a little longer at a lower temperature.

Like others, I had some leftover pumpkin and decided to try these. They were delicious. I might cut back on the spice and use one and a half teaspoons instead of two. Also after they were on the griddle I sprinkled a few chopped pecans on them and serve them with maple syrup.

Omigosh! Sooo good! Used molasses instead of brown sugar. Thank goodness I doubled the recipe! Served with butter pecan maple syrup. 1 cup chopped pecans, 1 stick Unsalted butter, 1/2 tsp salt, 2 cups maple syrup. Toast pecans in skillet medium-low heat, stirring constantly. Add butter and allow butter to begin to brown. Add syrup, simmer on low 5 mins, stirring occasionally. Serve hot over pumpkin pancakes. The thick batter makes them light and fluffy and irresistible! I need to try making them with mini chocolate chips, too. Thank you for a wonderful recipe. This will be a fall standard in our home!

I would suggest turning the heat down and try cooking them a little slower. All stoves heat a little bit differently so maybe that will help. They should get done all the way through without burning. I hope that solves your problem. I know my kids still love these pancakes.

The batter is very thick, which makes the best pancakes! I use the scoop to spread the batter around to an even thickness and larger diameter. This should give you an even doneness.

Great! Everyone loved them. Said it's like eating a pumpkin pie. I had to add much more water to thin it out enough to pour like regular pancake mix. For toppings we just did real maple syrup, real butter and almond slivers. Definitely a keeper here.
