    Salmon with Pasta and Asparagus

    I had this beautiful meal completed in less than 30 minutes. I wasn't sure if my husband would like the salmon with the pasta, but he loved it! Then my son came home and finished off what we left. I was hoping to have some for lunch the next day! No big deal. I am just happy my family enjoyed dinner and that I had yet another quick dinner recipe to add my collection.

    How to prepare this recipe

    First of all, start off with about ¾ pound filet of salmon or steel head. We buy both and they are easily interchangeable. Sprinkle some salt, pepper, dill and garlic (I used dehydrated garlic) over the fish.

    Start a large pan of water for the pasta. At the same time, heat up a skillet over medium to medium high heat for the salmon.

    When the water boils add the pasta. I used protein pasta and it took 10 minutes to cook. I started the fish at the same time. Put a lid on the skillet while the salmon cooks. Set the timer for 10 minutes.

    Meanwhile, chop up a few handfuls of asparagus into 1 inch pieces. You can also chop some fresh parsley if desired.

    When the timer goes off, remove the salmon from the frying pan to a cutting board. Drain the pasta and set aside.

    Add olive oil to the hot skillet and add the asparagus. Keep a close eye on it, the asparagus should be done in 1 to 2 minutes.

    Cut the salmon into 1 inch squares. When the asparagus is fork tender, add the salmon. Add addition salt, pepper, garlic and olive oil if desired. Stir well and mix with cooked pasta. Top with Parmesan and fresh parsley if desired.

    Ingredients

    • ¾ pound Salmon or Steel Head

    I used a piece of fish with the skin on, so it didn't need to be turned while cooking.
