How to prepare these molasses muffins
- Preheat oven to 375 degrees F.
- In a medium to a large mixing bowl, whisk the egg. Next, add the canola oil, molasses, milk, or buttermilk and mix well. Whisk in the brown sugar.
- Add the bran cereal and stir well to coat. Let the cereal sit for a couple of minutes.
- Meanwhile, prepare the muffin pan by lining it with muffin papers or coating well with non-stick spray.
- To the cereal mixture add the flour, baking soda, salt, and raisins. Stir until combined.

- Bake the Molasses Bran Muffins for 16 – 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.

I love bran muffins. I love using buttermilk in baking. And I love molasses. These muffins are perfect. I used All Bran buds and let them soak for about 10 minutes while I got the flour ready to add. They have a light texture with a nice molasses touch. It made 16 muffins for me. I had a bed and breakfast in Maine for 12 years. These would have been perfect in the morning with coffee or tea.
