    Banana Almond Bran Muffins

    A bran muffin that tastes like banana bread? Yep! These Banana Almond Bran Muffins are a perfect way to start your morning.

    With a touch of almond extract, and a few sliced almonds on top... Delicious!

    Banana Almond Bran Muffins

    Using All-Bran cereal, bananas, and a touch of almond flavor... This is definitely a tasty way to add some fiber to your diet.

    Banana Almond Bran Muffins

    2 - 3 Bananas, mashed
    2 cups All-Bran Cereal
    ¾ cup Milk
    1 Egg
    ¼ cup Canola Oil
    ½ cup Brown Sugar
    1 teaspoon Almond Extract
    1 teaspoon Baking Powder
    ½ teaspoon Salt
    1 cup Flour
    ¼ - ⅓ cup sliced Almonds

    Pre-heat oven to 375 degrees.

    Mash bananas in a large bowl. Add the cereal, milk, egg, oil, brown sugar, and almond extract. Stir well. Let the cereal mixture set a few minutes while you prepare your 12 cup muffin pan.

    Use muffin papers or spray your muffin pan with non-stick spray.

    Stir the cereal mixture again and add the flour, baking powder, and salt. Stir just until combined.

    Divide batter into muffin pan, you should get 12 muffins. An ice cream scoop works great. Sprinkle sliced almonds on top of batter.

    Bake in a 375 degree oven for 18 - 20 minutes, until golden brown and a toothpick comes out clean when inserted into the middle of the muffins.
