Mom Tip
Make sure that you use old fashioned oats for this recipe. Quick oats may become mushy and will give an unpleasant texture to the baked oatmeal.
Recipe Directions
Start by preheating your oven to 350°F (175°C). Grease a 9x9-inch baking dish to ensure nothing sticks!
- Step 1: In a large bowl, combine the old-fashioned oats, cocoa powder, brown sugar, baking powder, and salt. Stir to mix everything together.
- Step 2: In another bowl, whisk together the milk, eggs, and vanilla extract until well combined.
- Step 3: Pour the wet mixture into the dry ingredients. Mix until everything is nicely incorporated.
- Step 4: Gently fold in the chocolate chips.
- Step 5: Pour the mixture into your prepared baking dish and spread it evenly.
- Step 6: Bake for 35 minutes, or until the top is set and the edges are slightly browned.
Allow the baked oatmeal to cool for a few minutes. Serve warm with your choice of toppings—fresh berries, banana slices, a sprinkle of nuts, or a dollop of yogurt take it to the next level!
Storage
You can store leftovers in the refrigerator for up to a week. Simply reheat portions in the microwave for a quick breakfast on the go.
