    A bran muffin that tastes like banana bread? Yep! These Banana Almond Bran Muffins are a perfect and yummy way to start your morning.

    Using All-Bran cereal, bananas, and a touch of almond extract... This is definitely a tasty way to add some fiber to your diet.

    Not everyone likes bran muffins, but who doesn't like banana bread? Well, I guess not everyone does, but these delicious muffins might just change their mind.

    Basically, you have a banana muffin filled with fiber, with a touch of almond to add an extra bit of flavor. Delish! Pour yourself a glass of milk or a cup of coffee and enjoy.

    Ingredients needed

    To make Banana Almond Bran Muffins, you need

    • All-Bran Cereal
    • Bananas - extra ripe
    • Canola Oil
    • Egg
    • Milk
    • Brown Sugar
    • Almond Extract
    • Flour
    • Baking Powder
    • Salt
    • Slivered Almonds

    How to prepare these muffins

    1. Preheat the oven to 375 degrees F.
    2. Mash bananas in a large bowl. Add the cereal, milk, egg, oil, brown sugar, and almond extract. Stir well.
    3.  Let the cereal mixture sit a few minutes while you prepare your 12 cup muffin pan. Use muffin papers or spray your muffin pan with non-stick spray.
    4. Stir the cereal mixture again and add the flour, baking powder, and salt. Stir just until combined.
    5. Divide banana bran muffin batter into muffin pan, you should get 12 muffins. An ice cream scoop works great. Sprinkle sliced almonds on top of the batter.
    6. Bake in a 375-degree oven for 18 - 20 minutes, until golden brown, and a toothpick comes out clean when inserted into the middle of the muffins.

    Ingredients

    • 3 Bananas mashed (I use 2 large or 3 small to medium)
    • 2 cups All-Bran Cereal
    • ¾ cup Milk
    • 1 Egg
    • ¼ cup Canola Oil
    • ½ cup Brown Sugar
    • 1 teaspoon Almond Extract
    • 1 teaspoon Baking Powder
    • ½ teaspoon Salt
    • 1 cup All-purpose flour
    • ⅓ cup Almonds slivered

    Instructions

    • Pre-heat oven to 375 degrees.
    • Mash bananas in a large bowl. Add the cereal, milk, egg, oil, brown sugar, and almond extract. Stir well. Let the cereal mixture set a few minutes while you prepare your 12 cup muffin pan.
    • Use muffin papers or spray your muffin pan with non-stick spray.

    • Divide batter into muffin pan, you should get 12 muffins. An ice cream scoop works great. Sprinkle sliced almonds on top of the banana bran muffin batter.
