Instructions
Whisk together the flour, baking powder and salt. Add the remaining muffin ingredients and stir to combine. Do not over mix.
Fill muffin cups halfway, using half of the muffin batter. I used a cookie scoop and it worked perfectly.
Add brown sugar filling mixture to muffin cups. I had about 1 ½ teaspoons of filling for each muffin.
Add remaining muffin batter to the muffin pan.
Bake muffins in a 350-degree oven for 16-21 minutes, or until golden brown and a toothpick comes out clean when inserted.
This recipe makes 12 muffins.
When muffins are cooled slightly, dip tops into glaze and then set on a rack. They are delicious when still slightly warm.
Notes
*You can substitute Greek Yogurt for Sour Cream, it works great.
