    Strawberry Burritos

    These delicious Strawberry Burritos are perfect for breakfast or a snack. They are quick and simple to make. My son enjoyed them so much he even started making some on his own. This is a perfect recipe for kids learning their way around the kitchen!

    It is Sunday, May 4th, and I want to fix something light for breakfast. Yesterday, my husband picked up this box of wonderful, ripe, juicy strawberries from one of the local fruit stands. These little guys need to be enjoyed quickly before they go bad. I guess I also had Cinco de Mayo on my mind and these Strawberry Burritos is what I came up with.

    To make Strawberry Burritos all you need is...

    Tortilla Shells
    Cream Cheese
    Cinnamon Sugar Mixture
    Strawberries

    To start

    Spread some cream cheese on a tortilla shell , I used the large burrito size. Top with some sliced strawberries and sprinkle with a bit of cinnamon and sugar mixture.

    Next, start to fold up the Strawberry Burrito. Fold over both sides.

    Next, fold up the bottom and spread a little bit of cream cheese over the top, this will help seal up the burrito.

    Fold it up like an envelope and now it is ready to warm up!

    Warm them up

    Place burrito in the pan that has been warmed up over medium heat. Start with the sealed sign down. It only takes about a minute or so, then you need to turn them over. I placed a lid over the pan after I turned them. Let them warm for about another minute. Remove from heat, and cut in half if you like, but it isn't necessary.

    Looks so good! My kids love it with a little bit of whipped cream to dip the Strawberry Burrito in. I bet this would be good with blueberries too! Or maybe even peaches!

    In July 2016 I decided to update (most of) the photos for this post. My daughter was right there with me and she wanted to take some pictures too. This is her photo! She also was the one that found my old strawberry with a mouse ornament and suggested I use it in the pictures. I think he adds a nice touch to the pictures.

    This is a fun recipe to make with kids. The fresh strawberries mixed with cream cheese and a bit of whipped cream on the side is always a hit.

    Ingredients

    • 1 pint Fresh Strawberries
    • 2 Tortilla Shells
    • 1 teaspoon Cinnamon Sugar Mixture
    • 1 tablespoon Cream Cheese
    • ¼ cup Whipped Cream

    Instructions

    • Warm a skillet over medium heat.
    • Spread some cream cheese on a tortilla shell. Add some fresh sliced strawberries and sprinkle with cinnamon-sugar mixture. Fold up burrito style. 
    • Place strawberry burrito in warmed skillet, seam side down. After a minute or so turn over. Continue to heat until warm. 
    • Slice in half. Serve with whipped cream if desired.
