- Russet Potatoes

- Flour
- Milk
- Heavy Cream
- Cheddar Cheese
- Garlic Powder
- Paprika

Substitutions
- Cheese: Swap cheddar for Gruyere, Monterey Jack, pepper Jack, or mozzarella for a different flavor profile.
- Milk & Cream: Use half-and-half if that’s what you have on hand. For a lighter version, try whole milk.
- Russet Potatoes: Yukon Gold potatoes work well too, and they’ll bring a buttery texture to the dish.
Recipe Instructions
Prepare the slow cooker by for the Au Gratin Potatoes by spraying it with non-stick cooking spray.
Finely dice the onion.
Wash and peel the potatoes. Thinly slice. Using a Mandoline Slicer really helps to make this a simple job. The thicker the slices, the longer the potatoes will take to cook. I cut my potatoes to about ⅛ of an inch thick.
- Step 1: In a saucepan over medium heat, melt the butter and whisk in the flour. Cook for 1-2 minutes.
- Step 2: Slowly add the milk and heavy cream, stirring constantly until the sauce thickens.
- Step 3: Remove from heat and stir in 1½ cups of cheese, stir until melted.
- Step 4: Add the garlic powder, paprika, salt, and pepper. Stir. Taste, adjust seasonings if necessary.
- Step 5: Layer half of the potatoes into the prepared slow cooker. Top with half the diced onion, half the cheese sauce, then repeat.
- Step 6: Cover and cook on low for 4-5 hours until the potatoes are tender. In the last 30 minutes top with the remaining shredded cheese. Top the finished Au Gratin Potatoes with chopped parsley.
Storage & Reheating
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven for best results.
