4poundsRusset Potatoeslarge, peeled and thinly sliced
1Onionsmall, finely chopped
2cupsCheddar Cheeseshredded
1cupHeavy Cream
1cupMilk
2tablespoonsButter
2tablespoonsAll-Purpose Flour
1teaspoonGarlic Powder
½teaspoonPaprika
¾teaspoonSalt
½teaspoonBlack Pepper

Instructions
Prepare the slow cooker by for the Au Gratin Potatoes by spraying it with non-stick cooking spray.
Finely dice the onion.
Wash and peel the potatoes. Thinly slice.
In a saucepan over medium heat, melt the butter and whisk in the flour. Cook for 1-2 minutes.
Slowly add the milk and heavy cream, stirring constantly until the sauce thickens.
Remove from heat and stir in 1½ cups of cheese, stir until melted.
Add the garlic powder, paprika, salt, and pepper. Stir. Taste, adjust seasonings if necessary.
Layer half of the potatoes into the prepared slow cooker. Top with half the diced onion, half the cheese sauce, then repeat.
Cover and cook on low for 4-5 hours until the potatoes are tender. In the last 30 minutes top with the remaining shredded cheese. Top the finished Au Gratin Potatoes with chopped parsley.
Notes
For the potatoes: Using a Mandoline Slicer really helps to make this a simple job. The thicker the slices, the longer the potatoes will take to cook. I cut my potatoes to about ⅛ of an inch thick.Variations:
Cheese: Swap cheddar for Gruyere, Monterey Jack, pepper Jack, or mozzarella for a different flavor profile.
Milk & Cream: Use half-and-half if that’s what you have on hand. For a lighter version, try whole milk.
Russet Potatoes: Yukon Gold potatoes work well too, and they’ll bring a buttery texture to the dish.
