Recipe Ingredients for Taco Casserole
- Ground Beef - ground chicken or ground turkey may also be used.
- Taco Seasoning - mild or spicy, your choice.
- Tomato Sauce
- Diced Tomatoes - with diced green chiles for a little extra flavor and kick.
- Sour Cream
- Shredded Cheese - taco blend, Colby Jack, or shredded cheddar.
- Fritos Corn Chips - for that crispy topping. Make sure to reserve some chips to add crunch to any leftover casserole. See mom tip below!

Step-by-Step Recipe Directions
Preheat the oven to 375°F (190°C). Prepare a baking dish with nonstick cooking spray for easier clean up.
In a skillet over medium heat, cook and crumble the ground beef until browned. Drain excess fat.
Next, stir in taco seasoning, diced tomatoes, and tomato sauce.
Simmer the tomato and meat mixture for 5 minutes.
Spread half of the Fritos corn chips in to the bottom of the prepared baking dish.
Add the beef mixture over the corn chips.
Lightly spread the sour cream of the taco meat mixture.
Sprinkle with the shredded cheese.
Top the casserole with the remaining corn chips.
Bake the Frito Taco Casserole 20 - 25 minutes, until the cheese is melted and bubbly.
Garnish with sliced olives and green onions, or your favorite toppings, if desired.
Serve immediately.

Leftovers heat well in the microwave, however, the corn chips will be a little soft. No worries, it will still taste great! Make sure to reserve some of the Fritos corn chips to sprinkle over the reheated casserole to get that crunch!
