I love my mom’s old recipe box. Every once in a while I try a recipe out of it, like this Orange Pecan Bread, and old faded memories come back to me of when I was a child. When I first read this recipe, it didn’t ring any bells, but after tasting it, I remembered mom baking this yummy bread.
Although this Orange Pecan Bread is a little crumbly, it is still very light and delicious. The flavor of orange and pecans goes together so perfectly.
I tried to follow her recipe exactly (she called it Orange Nut Bread), but I did make a couple of minor changes. I used butter in place of shortening and I added a tiny bit more orange marmalade than the original recipe called for. Mom’s directions said to knead the bread dough a few times, I found that the dough was much too moist to knead, so I just mixed it well in the bowl. Mom’s recipe didn’t call for the glaze, I decided to add that at the last minute. I really have a hard time following a recipe.
Even though the bread was a little on the crumbly side, I really enjoyed it. It isn’t so heavy that you feel full after just a couple of bites. Actually, it made a perfect light breakfast for me.
Next time I make it I might add just a bit more marmalade or orange juice. I only had 1 small orange, so I used a little bit of bottled orange juice. Fresh oranges with grated orange rind would be an excellent in this recipe. Adding a little, say 1/4 cup , sour cream or Greek yogurt might be a nice addition too. You wouldn’t want too much, or you will lose that light texture.

Orange Pecan Bread
6 tablespoons Orange Juice
Freshly Grated Orange Rind, optional
1/4 cup Sugar
2 cups All-Purpose Flour, sifted
4 teaspoons Baking Powder
1 teaspoon Salt
2 – 3 tablespoons Orange Marmalade
1/3 cup Butter or Shortening, melted
1/2 cup Nuts, chopped (I use Pecans)
1/2 – 1 cup Powdered Sugar
Orange Rind, optional
Beat egg and add the orange juice, orange rind, and sugar. Mix well.
Add the flour, baking powder and salt. Mix until combined.
Next, add the orange marmalade, melted butter and pecans. *Stir well.
Pour the batter into a bread pan that has been sprayed with non-stick spray. Let rest for about 30 minutes.
Bake the Orange Pecan Bread in a 350 degree oven for about 40 minutes, or until a toothpick comes out clean when inserted into the center of the bread.
Prepare the glaze by mixing just enough orange juice to the powdered sugar to get a thick but workable consistency. Add fresh orange rind if you have it. Spread the glaze over the bread while it is still warm.
Let cool. Enjoy!
