This time of year I always seem to have some left over canned pumpkin from making muffins, pancakes, milkshakes, etc… Today I decided to try Pumpkin French Toast. It was delicious!
The combination of pumpkin, spices, a little maple syrup and bit of whipped cream… Yum!
I started with this Italian Pugliese bread I bought at Costco. It was a couple of days old and getting a little dried out. I think this would be good with any bread that has a hard crust. Actually, it would probably be good with any bread that you would normally make French Toast with.
Mix together the eggs, milk, pumpkin, pumpkin pie spice, and brown sugar.
Cut the bread into slices about 3/4 to 1 inch thick. Dip both sides of the bread into egg, and put into a pan that has been heated over medium to medium high heat. Some people put butter in the pan first, I never do.
After a couple of minutes, when the french toast is getting a nice golden brown, flip them over and cook another couple of minutes.
Pumpkin French Toast
8 slices of Crusty Bread (or a bread of your choice)
2 Eggs
1 tablespoon canned Pumpkin
2 tablespoons Milk
1 teaspoon Pumpkin Pie Spice
2 teaspoons Brown Sugar
Cut the bread into 3/4 to 1 inch slices.
Pre-heat a pan over medium to medium high heat.
Mix together the eggs, pumpkin, milk, pumpkin pie spice, and brown sugar. Dip both sides of the bread into the egg mixture and put into the preheated pan. Cook for a couple of minutes until golden brown. Flip over the french toast and cook for a couple more minutes,
Serve with maple syrup. Enjoy.
