Ingredients need for this recipe
Besides the ingredients listed below, you will also need some heavy-duty aluminum foil for this recipe.
- Red Potatoes - The buttery, creamy texture of red potatoes works very well in this recipe.
- Corn on the Cob - Either white or yellow corn will work in this recipe.
- Shrimp - The shrimp need to be thawed, peeled, and deveined. I like using the count of 16/20 shrimp per pound.
- Smoked Sausage - I know many recipes for shrimp packets call for andouille sausage, but I like using smoked sausage. We usually have some on hand anyway.
- Lemon - Just a slice to top everything off before cooking, and/or more to serve with the shrimp packet.
- Olive Oil - You can use Olive oil or canola oil in this recipe.
- Butter - The butter adds just a bit of richness and flavor.
- Garlic - This is optional. These shrimp boil packets are good with or without the garlic.
- Old Bay Seasoning - Old Bay is a delicious seasoning that goes great with any seafood. I think Cajun seasoning would also work very well with this recipe.
- Green Onion - The green onion adds a nice finishing touch. Some chopped fresh parsley could also be used.
How to prepare this recipe
You will need four pieces of heavy-duty aluminum foil. Each piece should be about 12 x 18-inches.
Wash and cube the red potatoes into 1-inch pieces.
Clean the corn on the cob and cut each ear into four pieces.
Thaw, peel, and devein the shrimp.
Cut the smoked sausage into thin slices. I had about six slices of sausage per packet.
Thinly slice a lemon and remove the seeds.
Finely chop a couple of cloves of fresh garlic.
Slice some green onion (or fresh parsley) and reserve for when it is time to serve the packets.
- Heat the grill to medium heat. My grill was registering about 400-degrees.
- Layout the foil and brush the center of each piece with a little bit of olive oil.
- Put a layer of the potatoes on the foil.
- Next, add the sliced sausage and the shrimp on top of the potatoes.
- Place a couple of pieces of corn on each side of the potatoes.
- Sprinkle everything with the old bay seasoning and the fresh garlic if used.
- Top off with a slice of lemon, another small drizzle of olive oil, and a small pat of butter.
- Seal up the Shrimp Boil Packets. Crimp the edges well so that everything steams in the packet while cooking.
- Place the packets on the grill and cook for about 20 minutes.
- Remove the packets from the grill, poke small holes in each packet to let some of the steam escape. Let them set a couple of minutes then they are ready to serve.
- Open Carefully! Top with a little of the sliced green onion. Then, enjoy the yummy Shrimp Boil cooked on the grill. Delish!
Season with salt and pepper if you like, but honestly, I don't think it does.

Hola looking to fix this soon. What do think of making it in a sheet pan instead of individual pockets? Should the timing be adjusted? Thanks for the inspiration! Monica
Cook This Again Mom
Hi! If you make it in a sheet pan, I might suggest covering it with foil or make one large foil packet. Having it sealed in foil helps steam everything. If you want to make it without foil keep a close eye on it and you may need to adjust the time to make sure the potatoes get cooked through. Let me know how it turns out.
