The other day I stopped at a local fruit stand and found some beautiful Roma tomatoes and red onions. I knew immediately that I would fix Summer Veggie Pasta with Sausage for dinner that night. This is my son’s favorite pasta dish. We love to have this dish on warm summer evenings. This recipe is light and quick to put together.
The base ingredients for this recipe are onions, tomato, and basil. Sometimes we keep it that simple, other times we add to it. This time I threw in some jalapeno sausage and zucchini. It was delicious!
Here are the usual suspects. Roma tomatoes, red onion, garlic, basil, Parmesan cheese, crushed red chilies (red pepper flakes), olive oil, and pasta. This Barilla tomato and carrot pasta was delicious and went perfectly with the other ingredients.
This time I threw in some zucchini and this wonderful Jalapeno Cheddar Smoked Sausage. Since I was using the jalapeno sausage, I omitted the crushed red chilies. Sometimes I used Smoked Sausage or Polska Kielbasa.
Start your favorite pasta cooking. Then, heat a large pan over medium to medium-high heat. Add olive oil, onion, zucchini, and sausage. Cook for several minutes. If you are using the crushed red chilies, add it at this point. Season with some salt and pepper.
When the sausage has cooked long enough and the zucchini is tender, add the garlic. Stir and cook for a moment.
Turn off the heat and add the tomatoes.
Throw in the pasta and chopped basil. Stir. Season with more salt and pepper if needed. That is it, a very simple dinner recipe. It’s time to eat!
Serve the Summer Veggie Pasta with Sausage with some grated Parmesan cheese if desired.
Summer Veggie Pasta with Sausage
1 -2 tablespoons Olive Oil
1 Red Onion, chopped
4 – 5 Roma Tomatoes, cut into bite-size pieces
2-3 (or more) cloves of Garlic, chopped
1 Zucchini, cut into bite-size pieces
Chopped Basil (I used about ½ of a bunch)
¼ – ½ teaspoon Crushed Red Chilies (Red Pepper Flakes), if using
4 Jalapeno Sausages (if using), cut into bite-size pieces
Grated Parmesan Cheese
Salt and Pepper, to taste
Pasta of your choice
Get a large pot of water boiling and cook the pasta.
While the pasta is getting started, heat a large pan over medium to medium-high heat. Add 1 -2 tablespoons of olive oil, the onion, zucchini, and sausage. If you are using red pepper flakes, add it now. Season with salt and pepper. Cook for several minutes until sausage is warmed through and zucchini is tender.
Add the garlic and stir for a moment. Turn off heat, add tomatoes, cooked pasta, and basil. Stir to mix. Add more salt and pepper if needed. Done! Top with Parmesan cheese if desired.
