    I love dates! This recipe for Cheese Stuffed Dates Wrapped in Bacon is topped with finely chopped green onions. A delicious appetizer for holiday parties and game day gatherings.

    Sweet dates, smokey bacon, creamy cheese, and fresh green onion to top it all off. Yum!

    This is my version of a recipe I recently found in the Costco Connection magazine. 

    I used thick-cut bacon, so I cut each piece in half lengthwise and again width-wise. Basically, I got 4 little pieces of bacon from 1 slice. I slightly cooked the bacon before wrapping the dates.

    Ingredients needed

    • Medjool Dates
    • Thick-cut Bacon
    • Havarti Cheese
    • Green Onions

    I bought a 12-ounce package of Medjool Dates but I only used about ⅓ of the package since only my husband and myself were trying them.  I will base my ingredients on what I used but this recipe can easily be double, tripled, etc...

    How to make this recipe

    Cheese Stuffed Dates Wrapped in Bacon is super simple to make.

    Slightly pre-cook the bacon.

    Take the pits out of the dates if needed and open up slightly so you have room to place the cheese.

    Slice cheese into small strips. Stuff cheese into the dates and wrap with bacon. Hold together with a toothpick.

    Bake until cheese is melted and bacon is golden.

    Cool slightly and serve.

    Slightly cook the bacon.

    Ingredients

    • 4 ounces Medjool dates pitted
    • 2 Slices Bacon thick-cut
    • 2 ounces Havarti Cheese
    • 1 tablespoon Green Onions finely chopped

    Instructions

    • Slice the bacon in half both width-wise and length-wise.
    • Slightly cook the bacon.
    • Take the pits out of the dates if needed and open up slightly so you have room to place the cheese.
    • Slice cheese into small strips. Stuff cheese into the dates and wrap with bacon. Hold together with a toothpick.
    • Bake in a 400 degree oven for 6 - 10 minutes until cheese is melted and bacon is cooked.
    • Cool slightly and serve.

    Notes

    I used thick cut bacon so I cut each piece in half lengthwise and again width wise. Basically I got 4 little pieces of bacon from 1 slice. I slightly cooked the bacon before wrapping the dates. If I had used thin cut bacon I may have skipped the pre-cooking.
