1packetTaco Seasoning
10ouncesDiced Tomatoes with Green Chilesdrained
8ouncesTomato Sauce
1cupSour Cream
2cupsCheddar Cheeseshredded
3cupsFritos Corn Chips
½cupGreen Onionschopped
¼cupBlack Olivessliced
Instructions
Preheat the oven to 375°F (190°C).
Prepare a baking dish with nonstick cooking spray for easier clean up.
In a skillet over medium heat, cook and crumble the ground beef until browned. Drain excess fat.
Next, stir in taco seasoning, diced tomatoes, and tomato sauce.
Simmer the tomato and meat mixture for 5 minutes.
Spread half of the Fritos corn chips in to the bottom of the prepared baking dish.
Add the beef mixture over the corn chips.
Lightly spread the sour cream of the taco meat mixture.
Sprinkle with the shredded cheese.
Top the casserole with the remaining corn chips.
Bake the Frito Taco Casserole 20 - 25 minutes, until the cheese is melted and bubbly.
Garnish with sliced olives and green onions, or your favorite toppings, if desired.
Serve immediately.
Notes
Variations:Use your favorite Taco Blend or Colby Jack Cheese in place of the Cheddar.For the taco seasoning, use your favorite brand, mild to spicy. Add any of your favorite taco toppings. Make sure to reserve some chips to add crunch to any leftover casserole.
