For the Roasted Tomato Soup
Ripe Tomatoes - Roma or vine-ripened work great.
Onion - Yellow or White Onion. Adds a natural sweetness once roasted.
Garlic - Whole cloves that are also roasted.
Olive Oil
Salt an Black Pepper - Adjust to taste.
Basil - Dried or fresh basil works fine. Or, Italian Seasoning as a substitute.
Tomato Paste - Just a little helps boost the tomato flavor.
Cream - Optional, but for a creamy soup use Cream or Half-and-Half.
For the Air Fryer Grilled Cheese Croutons
Bread - We prefer a thicker bread but any sandwich bread will work.
Cheese - Use your favorite. Cheddar, Mozzarella, or American.
Butter - Soften the butter first to make it more spreadable.
How to make Roasted Tomato Soup
Preheat oven to 425°F. Cut the tomatoes and onions into quarters.

Spread tomatoes, onion, and garlic on a baking sheet; drizzle with olive oil, sprinkle with salt, pepper, and basil.

Roast for 35-40 minutes until tender and caramelized.

Transfer roasted vegetables to a pot. Add broth and tomato paste, then simmer for 10 minutes.

Blend with an immersion blender until smooth.
Mom Tip
You can use a regular blender in place of the immersion blender. Do this in batches if necessary and slightly vent the lid since the soup is still hot.

Stir in cream if you are using it.

You can top the soup with a little grated Parmesan cheese and some chopped thyme for garnish if you like.

How to make Air Fryer Grilled Cheese Croutons

Place the cheese on the bread.

Butter one side of each slice of bread.

Air fry at 370°F for 6-8 minutes. Flip the grilled cheese halfway through cooking time.

Cook until golden and crisp.

Let cool slightly, then cut into small cubes.

Return the cheese filled croutons to the air fryer and continue toasting for 6 to 7 minutes or until crisp, shaking halfway.

Ladle the soup into bowls and top with a handful of warm cheesy croutons.
