This Pasta with Baby Bella Mushrooms recipe is a perfect, quick meal for parents on those nights the kids are insisting on chicken nuggets or pizza bites.
It comes together in about 30 minutes with just a handful of ingredients, and the fresh herbs make all the difference. Sage brings a strong, earthy flavor, while thyme gives the whole dish a completely different (and equally delicious) personality. It's easy enough for a weeknight, but good enough to serve to company.
Baby Bella Mushroom with Pasta Ingredients

- Baby Bella Mushrooms - We love the texture and taste of baby bella mushrooms, and their deeper color looks great against the pasta. White button mushrooms are a good substitute too - we like both varieties in this recipe, so use whichever you have on hand.
- Fettuccine - Don't have fettuccine? We've made this with spaghetti, penne, spiral pasta, and even protein pasta, and it turns out great every time, so use what's in your pantry.
- Fresh Sage - Sage brings a strong, earthy flavor that pairs beautifully with the mushrooms. Fresh thyme is a great substitute too, we love thyme with mushrooms in general, and it gives the dish a completely different flavor while still working really well. Just note we've only tested this with fresh herbs, not dried.
- Fresh Garlic - Olive Oil - Shredded Parmesan - Salt - Pepper - Fresh Parsley - All basic ingredients that really bring this meal together.
How to make Pasta with Baby Bella Mushrooms
Start a large pot of water to boil for the pasta. Cook the pasta according to the package directions. Drain the pasta reserving about 1 cup of the water. Set the pasta and reserved water aside while cooking the mushrooms

Heat a skillet over medium heat. Add the olive oil and mushrooms. Cook until the mushrooms start to soften.

Next, add the garlic, salt, and pepper. Continue to cook for a minute or two.

Turn the heat off and add the fresh sage (or thyme) and stir well. The fresh herbs don't need to cook.

Finally, add the drained pasta and a little bit of the reserved water if needed. Stir well. Top with grated Parmesan cheese and fresh chopped parsley.

Finished Pasta with Baby Bella Mushrooms and Herbs. Yum!

Absolutely. Chicken, shrimp, or sausage all work well with this recipe if you want to turn it into a heartier main dish.
Pecorino Romano or Grana Padano are both great substitutes. Or skip the cheese altogether and finish the dish with extra fresh herbs, chopped parsley, and a bit of black pepper.
