My son and I are big fans of Sweet Potatoes! We like them Roasted, Baked, and Mashed. (Note to self, don’t forget to blog other sweet potato recipes!) These Mashed Sweet Potatoes are a nice alternative to regular mashed potatoes.

Mashed Sweet Potatoes

- 2 lbs. Sweet Potatoes, peeled and cut into large pieces
- 4 tablespoons Butter
- 2 tablespoons Brown Sugar, or adjust to taste
- 1 tablespoon Maple Syrup, optional
- 1/4 cup Orange Juice
- 1/2 cup Milk
- 1 teaspoon Cinnamon
- Salt, to taste
Peel and cut up the sweet potatoes. Place them in a large pan and cover with water. Cook until fork tender. Drain the water from the potatoes and return them to the pan. Toss in the butter and cover the pot for a few minutes. This gives the butter a chance to melt and the potatoes a moment to cool a bit.
Meanwhile, get the rest of the ingredients together. You can either mash the sweet potatoes with a potato masher or do like I do, and use a hand electric mixer. Start to mash, or whip up the potatoes a bit. Add the brown sugar, maple syrup, orange juice, milk, cinnamon and some salt. Continue to mix until all of the potato chunks are mashed and they are nice and fluffy. Sample and adjust any seasoning to taste. Enjoy!
