    Peanut Butter Cookies

    This recipe for Peanut Butter Cookies is one that I started using when I was just a teenager. I lived with my grandmother for a while and she always wanted some cake or cookies on hand for the weekend, just in case someone would stop by.

    It wasn't long before Bill caught on to when there would be goodies at grandma's house. I think cookies were his favorite. Bill and my brother first met when they were teenagers. Bill quickly became a good friend to me, and an honorary member of the family.

    At first, Bill would just happen to drop by and have a couple of cookies and chat. Then he started showing up every Friday. The next thing we knew he would show up with a carton of milk. To this day we still joke about it. Even though we live in different states, if I do a Facebook post that I am making cookies, Bill will reply... I'll bring the milk!

    I'm not sure exactly how I came across this recipe. It is handwritten by me (back when my handwriting was legible). The recipe has to be close to 30 years old. I have made a couple of slight changes to the original recipe.

    First of all, the original recipe called for shortening. Grandma would buy shortening, but I never do. So I substituted ½ butter and ½ oil. That is the way my mom usually made cookies.

    The second thing I changed is the oven temp. Originally I had 375 degrees. I know that would be too hot in my current oven. So I have reduced it to 350. Grandma had an old oven, and we were always having to adjust the temps on recipes. Plus, the door didn't close right. But wow, we sure made some good cookies in that old oven!

    Peanut Butter Cookies

    3 cups Flour
    2 teaspoons Baking Soda
    ¼ teaspoon Salt
    ½ cup Butter, room temperature
    ½ cup Canola Oil
    1 cup Granulated Sugar
    1 cup Brown Sugar
    2 Eggs
    1 cup Peanut Butter
    1 teaspoon Vanilla

    Mix together flour, soda, and salt. Set aside.

    In a large mixing bowl beat the butter, oil, and sugars with a hand mixer until creamy. Add the eggs, peanut butter, and vanilla and continue to beat until completely mixed together.

    Add the flour mixture to the peanut butter mixture and combine using a wooden spoon. Form cookie dough into balls (I used a cookie scoop that holds about 1 tablespoon of the batter) and place on a cookie sheet. Press each cookie slightly in a crisscross pattern with a fork that has been dipped in sugar.

    Bake cookies in a 350-degree oven for about 12 - 15 minutes.

    These cookies feel light and a little crisp on the outside, a little chewy on the inside. You should get about 48 cookies.
