    Orange Ginger Quick Bread

This is an updated post for Orange Ginger Quick Bread that was one of the first recipes I posted to this blog. The original blog date was November of 2013. I have been wanting to update it for a while and when I received the fall spice collection from Raw Spice Bar I knew that their Unpumpkin Pie Spice would be perfect in it.

    Orange Ginger Quick Bread

In my original recipe, I used Ginger, Cinnamon, Cardamom, and Nutmeg. I have left the recipe as originally written. But in these photos, I used the Unpumpkin Pie Spice in place of these spices. It was delicious!

The bread is extremely moist and full of flavor. The glaze with grated orange zest is the perfect addition.

I made a little too much glaze, but oh well... I used it anyway. My husband kept calling it cake because it had frosting on it. I told him no, it was glazed, just a lot of it. And to just think of holiday bread (pumpkin, cranberry, etc... ) because it sounds healthier, especially when you are having it for breakfast.

    Orange Ginger Quick Bread

    Mix together dry ingredients...

    1 ¾ cups Flour
    1 ½ teaspoons Baking Powder
    ¼ teaspoon Salt
    1 teaspoon ground Ginger
    1 teaspoon Cinnamon
    ½ teaspoon Cardamon
    ¼ teaspoon Nutmeg

In a separate bowl mix together...

    ½ cup Orange Juice
    ½ cup Milk
    ¼ cup Oil
    2 Eggs
    ⅓ cup Honey

Mix liquids with dry ingredients and stir just until blended.

Put in a bread pan coated with non-stick spray. Bake in a 350-degree oven for 40 - 50 minutes, or until a toothpick comes out clean when inserted in the center of the bread.

Let cool slightly on a rack.

    To make glaze...

    ½ cup Powdered Sugar

    Orange Zest

Approximately 1 Tablespoon of orange juice or milk (adjust to get the consistency you want).

Pour glaze over the Orange Ginger Quick Bread and serve.

I think I may try this same recipe as mini muffins for a Thanksgiving morning snack.
