    For years sweet potatoes were associated with the holidays, especially Thanksgiving. Remember those sugary, sticky, rich sweet potato (or yams) dishes topped with marshmallows?

    Ingredients needed

    • Sweet Potatoes
    • Butter or Margarine
    • Brown Sugar
    • Maple Syrup
    • Orange Juice
    • Milk
    • Cinnamon
    • Salt

    Over the past few years or so, sweet potatoes have become more of a staple. They are so easy to fix, there are so many different ways to prepare them, and they have some great nutritional value.

    Whether you like them for a lite lunch or a side dish, they are great to keep on hand. This recipe for Easy Mashed Sweet Potatoes is one of our favorite ways to serve them.

    How to prepare this recipe

    1. Wash and peel the sweet potatoes. Cut the potatoes into uniformly sized pieces. The larger the pieces the longer they will take to cook.
    2. Place the sweet potatoes into a saucepan. Cover with water and bring to a boil over medium to medium-high heat.
    3. Boil gently, until they are done. You will be able to insert a fork into them easily.
    4. Drain the potatoes and return them to the pan.
    5. Add the butter or margarine to the potatoes and allow it to melt.
    6. Using a potato masher or an electric mixer lightly mash the potatoes.
    7. Add the remaining ingredients and continue to mash until the sweet potatoes are nice and fluffy. Adjust any ingredients as needed for texture or taste.

      I love sweet potatoes too! Though I am in the minority at my house I can find other sweet potato eaters when I visit my mom and sister. I love how you put orange juice in these too, what a great idea!
