    Simply Delicious Chocolate Cupcakes

    These Simply Delicious Chocolate Cupcakes are really moist and, well... delicious. This recipe makes 12 cupcakes.

    Over the past couple of weeks, my daughter and I have both been craving chocolate cupcakes. My daughter decided to make a batch and we found an old recipe buried in the recipe drawer ( along with hundreds of other recipes). She whipped them up and although yummy, we both thought they were a little dry.

    A few days later she tried again, but unfortunately this time we ran just short of cocoa powder. Again, although they were good cupcakes, they weren't exactly right. One day, while my daughter was at school, I decided to try again and surprise her with an after-school treat.

    Well, third time is a charm, right? This time she and everyone agreed that this recipe for Simply Delicious Chocolate Cupcakes was a keeper. So, a big thank you to my daughter for all her help in the test kitchen! And, thank you to my mom. Although she is no longer here for me to ask her advice, I did remember a chocolate cake she used to make with mayonnaise, and how moist and delicious it was. The mayonnaise along with the other adjustments was just what these cupcakes needed.

    Since we were keeping it simple, we used store-bought frosting and a few rainbow sprinkles for a little pop of color.

    Simply Delicious Chocolate Cupcakes

    1 cup Flour

    ½ teaspoon Baking Soda

    1 teaspoon Baking Powder

    ½ teaspoon Salt

    ⅓ cup Cocoa Powder

    ¼ cup Canola Oil

    ¼ cup Mayonnaise

    1 teaspoon Vanilla

    ½ cup Granulated Sugar

    2 Eggs

    ½ cup Milk

    Pre heat the oven to 350 degrees.

    Prepare 12 cup muffin pan with cupcake liners.

    In a mixing bowl add  the dry ingredients... flour, baking soda, baking powder, salt and cocoa powder. Using a whisk, mix until well combined.

    Add the remaining ingredients and continue to mix until well blended.

    Using an ice cream scoop, divide mixture into the muffin pan.

    Bake for 14 - 17 minutes, or until a toothpick inserted in the center comes out clean.

    Cool slightly, frost and decorate, if desired.
