By adding strong coffee in place of water to your favorite white cake mix, you get simple, delicious coffee cupcake. Top off the cupcake with our amazing mascarpone frosting and you have an easy, tiramisu dessert the entire family will love.
Recipe Ingredients

- White cake mix
- Instant coffee or pre-made strong coffee
- Ingredients listed on cake mix box (eggs and oil)
- Mascarpone
- Heavy whipping cream
- Powdered sugar
- Cocoa powder
Step-by-step Directions


- Make the coffee cupcake batter. Follow the package directions except use strong coffee in place of the water.
- Add the cupcake batter to a paper lined cupcake pan. Cook the coffee cupcakes per the package directions.

- After the cupcakes have baked and cooled make the mascarpone frosting. Mix together the mascarpone with the powdered sugar until creamy.
- Next, add the heavy whipping cream and continue to mix until the frosting becomes light and fluffy.


- Frost the cupcakes with the mascarpone frosting. I like to use a cookie scoop and just pile on the frosting.
- Sprinkle the frosted coffee cupcakes with a little bit of cocoa powder. Serve and enjoy!
Storage
Store these cupcakes in a sealed container in the refrigerator.
Mom Tip
If you don't have a cup of leftover strong coffee from the morning, try this instead. Use instant coffee and dissolve it in a small amount of water. I usually use 2-3 heaping teaspoons of coffee granules. Then, add more water to equal the amount of liquid as needed per the box of cake mix.
