This colorful summer pasta with zucchini, tomatoes, and smoked sausage comes together in less than 30 minutes and is packed with fresh garden veggies and bold flavor. Easy enough for a weeknight.
2cupsRoma Tomatoesdiced, or cherry tomatoes cut in half

1cupZucchinisliced
½cupFresh Basilchopped
13ouncesTurkey Smoked Sausagesliced
¼cupParmesan Cheeseshredded
½teaspoonSalt
¼teaspoonBlack Pepper
⅛teaspoonRed Pepper Flakes

Instructions
Cook the pasta according to the package instructions. Drain and set aside.
Heat up the pan over medium heat. Add some olive oil, sausage, onion, and zucchini. Cook for several minutes or until the onion has softened and the zucchini is fork-tender.
Season the mixture with some salt, pepper, red pepper flakes, and garlic. Stir and cook for about 30 seconds.
Turn off the heat and add the tomatoes, basil, cooked pasta, and another drizzle of olive oil. Stir to combine.
Serve the Pasta with Veggies and Smoked Sausage topped with Parmesan cheese and extra basil if desired.
Notes
Store leftovers in the refrigerator. This dish re-heats nicely in the microwave and is very tasty the next day. Protein pasta works great in this recipe.I like turkey smoked sausage, but any kielbasa or smoked sausage will do. Green onion can be used in place of the red onion. Just remember to add it at the end with the tomatoes.
