Brighten up your meals with this Citrus Rice! Made with fresh orange and lime, it’s a quick & flavorful side dish perfect for chicken, seafood, or veggies.
In a medium saucepan, heat the 1 tablespoon Olive Oil or butter over medium heat. Add the 1 cup Long-Grain White Rice and stir for about 1-2 minutes until lightly toasted.
Pour in the 2 cups Chicken or Vegetable Broth1 teaspoon Orange Zest, 1 teaspoon Lime Zest, 2 tablespoons Fresh Orange Juice, 1 tablespoon Fresh Lime Juice, ½ teaspoon Salt and ¼ teaspoon Black Pepper Stir to combine.
Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes, or until the liquid is absorbed.
Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and stir in the 2 tablespoons Fresh Cilantro, if using.
Serve warm alongside your favorite main dish.
Notes
If you rather use brown rice, increase the amount of liquid and cooking time. Check your package for guidelines. Fresh orange and lime juice will produce the best results. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat with a splash of broth or water to keep it fluffy.
