3Bananasmashed (I use 2 large or 3 small to medium)
2cupsAll-Bran Cereal
¾cupMilk
1Egg
¼cupCanola Oil
½cupBrown Sugar
1teaspoonAlmond Extract
1teaspoonBaking Powder
½teaspoonSalt
1cupAll-purpose flour
⅓cupAlmondsslivered
Instructions
Pre-heat oven to 375 degrees.
Mash bananas in a large bowl. Add the cereal, milk, egg, oil, brown sugar, and almond extract. Stir well. Let the cereal mixture set a few minutes while you prepare your 12 cup muffin pan.
Use muffin papers or spray your muffin pan with non-stick spray.
Stir the cereal mixture again and add the flour, baking powder, and salt. Stir just until combined.
Divide batter into muffin pan, you should get 12 muffins. An ice cream scoop works great. Sprinkle sliced almonds on top of the banana bran muffin batter.
Bake in a 375 degree oven for 18 - 20 minutes, until golden brown and a toothpick comes out clean when inserted into the middle of the muffins.
Notes
Cool muffins before removing muffin paper to avoid sticking.
