Instructions
Bake the potatoes before starting this recipe. Let them cool slightly and then remove the potato skin.
Preheat the oven to 375 degrees Fahrenheit.
Place the peeled potatoes in a large mixing bowl. You can mashed the potatoes lightly before adding the other ingredients.
Add in the sour cream, softened butter, milk, half of the shredded cheddar cheese, half of the crumbled bacon (if using), half of the sliced green onions, salt, and pepper. Mix well until completely combined and creamy.
Place the mashed potatoes into a baking dish that has been sprayed with non-stick cooking spray.
Add the remaining shredded cheese over the mashed potatoes.
Sprinkle with the crumbled bacon. Bake the Twice Baked Mashed Potatoes for 20 to 30 minutes until warmed through and the cheese has melted.
Sprinkle the remaining green onions over the top of the Twice Baked Mashed Potatoes for garnish. Serve!
Notes
How to make Bake Potatoes
Preheat oven to 375 degrees Fahrenheit.
Scrub and rinse russet potatoes to clean off any dirt. Wipe dry with a paper towel.
Poke 2 or 3 holes into the potato using a fork.
Cook the potatoes for 45-60 minutes. A fork will slide easily into a potato when it is done.
